Best Grain Free Pizza Ever!!!

For the Pizza Base! 
1 1/2 cups tapioca starch
1/4 cup each cream and water
2 tbsp butter
1/2 tsp salt
1 egg, beaten
1 tsp Italian Seasoning
3/4 cup grated Parmesan cheese
In a pot add the cream, water, butter and salt.   Bring it to a simmer on a low-medium heat so that its bubbling but not boiling. 
In a large bowl, add the tapioca starch. Once the cream and water mixture is heated right through add it to the starch and stir it all together. It will start to clump together. Let the mixture cool for five minutes. While cooling preheat your oven to 250C degrees Fan-forced.
Add the beaten egg to the mixture, and stir thoroughly or use your hands but it does get sticky. Add the grated cheese and Italian seasoning and mix together until it’s dough-like. This is enough dough for two pizzas.
Split the dough in half. Put the dough in an oiled cast iron skillet, stretch it out as thin as possible - this is important otherwise your crust will be too chewy, it will likely tear if you stretch it too far, the oil will help you spread the dough smoothly to the edges using your fingers. With a fork, poke some holes through the dough to let air pass through.






























Bake in the middle of your oven for six minutes, then take it out to put all your toppings on.





























Add whatever toppings you like. For this one I used BBQ & Tomato sauce, pancetta, tomatoes and mozzarella cheese.





























Place it back in the oven and cook for another 8 minutes, until the cheese starts to brown. Then take out of oven and slice as you would regular pizza.






























This is simply the BEST grain free pizza I have ever tried and I would even go so far as to say possibly the best pizza I've ever had, I'd liken it to Sal's Pizza (New York Pizza)!  It has the most perfect crunch on the outside with a slightly chewy texture on the inside. This is the nature of tapioca starch. You will not be disappointed!!! 
Now just remember its still pizza so it has a lot of calories if you are using cheese, although its grain free tapioca isn't carb free or calorie free ;) Just eat a couple of pieces and not the whole thing, although I know you'll be tempted ;)

Low Carb Pizza Base

I've tried many many low carb pizza bases since I've been primal and pretty much all of them have been quite good with a few epic fails!

This one is a winner with hubby who is my biggest critic of any of the 'substitute' concoctions I have tried over the years. He was loving it and gave me words 'You nailed it baby', music to my ears :-)

So the recipe is below, first I would like to give credit to Your lighter side as that is where the idea for combining chicken and mozzarella comes from, she suggests to use an egg and flaxseed if you are dairy intolerant so I figured what would it hurt to just add those in as well and reduce the amount of chicken a little, her original recipe is here if you'd like to try it...http://yourlighterside.com/easy-pizza-crust/

The way I made it was:

  • 3/4 cup leftover cooked chicken breast crumbled in a food processor
  • 1 cup grated Mozzarella
  • 1/4 cup flaxseed
  • 1 egg
  • 1 Tbsp Italian Seasoning


Preheat oven to 215C fan bake

Prepare an oven tray or pizza tray with non stick baking paper plus an extra piece of baking paper.

Crumble the chicken first in the food processor so you can measure an exact 3/4 cup, then pop back in to the food processor, add the cheese and pulse so it crumbles also and then add the rest of the ingredients, it will turn into a slightly sticky dough mixture.

Dump the mixture onto your tray lined with baking paper and either press into your desired shape or roll the dough into a ball and place the other piece of baking paper on top and use your rolling pin to flatten it out evenly.

Bake the base in your oven for 10 minutes and then top with your choice of toppings, there's no need for it to stand or flip. Pop your toppings on and then grill for approx 5 minutes to cook the toppings and crisp the cheese.

I generally top mine with some BBQ sauce, pesto, red onions, cherry tomatoes, roasted red peppers, hot salami, feta or cream cheese and then more mozzarella, then grill.

It was ready to eat right away with my hands which made me feel like I was almost eating the real thing, just remember that nothing will ever work the same as wheat flour but a lot of the low carb recipes are pretty great! This recipe was the best I have tried so far!!!

Meatza is a regular in our house, it's a treat as it's got a ton of cheese! so long as you eat only a couple of pieces you can still lose weight, just don't go nuts on it as it's pretty calorie dense!

  • 2 Eggs
  • 400gms Pork Mince
  • 1/4 cup Parmesan Cheese
  • 1 Tbsp Italian Seasoning


Combine all ingredients, spread out evenly into pan on some baking paper or it will stick! remember it will srink when cooked, bake for 10mins on 230C or 450F oven and drain off liquid/fat.

Top with toppings of your choice, I like to do different topping each time I make it.  For this one I used bbq sauce, green capsicum, cherry tomatoes, pineapple, bacon, mushrooms, feta and mozarella.
Then grill for approx 5-10mins

Soo delicious, I highly recommend trying this if you are missing pizza, it really hit the spot and got rave reviews from husband :) I topped mine with bbq sauce, caramelised onions, bacon, cherry tomatoes, roasted red peppers and mozarella, yummo!!!

The best invention of Low Carb Pizza ever! No I didn't come up with this and will follow the wishes of the woman who invented this pizza to not post the recipe so I will just share my pics of when I made it! It's absoultey delicious and you would never know that it wasn't real bread base pizza. 

It's extremely tasty and works best when you use low fat mozarella, then you can use higher fat delicious toppings:

Follow the base recipe (link below) then my toppings were, tomato paste, fresh basil, salami, cherry tomatoes, cream cheese, parmesan, brie and more mozarella!
