Day 11 Whole30

Tuesday, September 17, 2013

I'm finding my grove with this Whole30, plenty of variety in my diet and a ton of veggies! Day 11 wasn't super smooth, I had a few cravings and found myself wishing I could just have a piece of 85% Lindt and Nespresso with cream, however I didn't as I don't want to short change myself, I need to remind myself why I'm doing this Whole30.

I wouldn't say it's hard but it's not easy either, when hubby is sitting there eating chocolate and I'm not then yeah at that moment it feels hard but it's all relative, it really isn't that hard, it's just changing habits and not being so emotional with food. I feel like things are changing for the better, still can't believe I've gone 11 days without chocolate or dairy, I'm over a third of the way there :)

8 hours sleep
7am: 3 egg omelet filled with sautéed kale, red peppers, mushrooms, cherry tomatoes, bacon and walnut pesto
12pm: Lamb and Pumpkin coconut curry with green beans & cashews
6pm: 1 tablespoon of Coconut Manna
8pm: Cajun steak with avocado/mayo onto of a large salad, mesclun, cucumber, yellow peppers, radishes, cherry tomatoes

Pinenut Crusted Lamb Loin Fillets

Monday, June 17, 2013

To make the crust:
Roast your pine nuts, once roasted put them in a mortar and pestle with the lemon rind, grated garlic, chopped rosemary together with a little salt and pepper, toss through the grated Parmesan cheese.  Coat the lamb fillets with Dijon Mustard and roll the fillets through the crust.

Place the lamb on an oven dish covered with baking paper.

Preheat oven to 240C FanForced. Cook lamb for 8 minutes ( medium-rare). Remove from the oven, let the lamb rest for 10 minutes.

Some basic eats!

A few of my basic eats....
Always good to start the day with a feed of bacon, kranskys and poached eggs, helps get me back on track to some good eating and a reminder of why Primal eating is so easy and delicious!

Nothing like some Grilled lamb loin chops with mashed pumpkin (add a little cream cheese) steamed brocolli and green beans drizzled with butter!

My favourite sausages, pork and bacon from the butcher, no flour in these babies! Served with natural sweet chilli sauce mmmm

Calamari and prawns with hollandaise sauce while eating out for my 31st Birthday on Saturday!

I can't believe it's been a year since my 30th Birthday, I celebrated my 31st birthday on Saturday, I've well and truly left my 20's now and I'm feeling good about it, I spent several years of my 20's overweight and unhappy so my 30's are going to be the best! So far so good :)
