Feta and Sundried Tomato stuffed Chicken with White Wine Reduction

This is my husband’s favourite dish and one of my many favourites. I used 3 small-med chicken breasts that I butterflied, lay all flat on cooking paper, top with 125gms Creamy Feta and 6 or so chopped sundried tomatoes, roll it up in the cooking paper and roll again in some more cooking paper long ways and twist at end kind of like a lolly. Bake at 360F for 1 hour. Take out of oven remove baking paper and sear in a little butter in a hot pan then let rest for 10mins. Serve with White wine reduction which is approx 1 part white wine to 3 parts cream and boiled to reduction.

  6. Hi Michelle. I have found just found your blog. I have been going back and reading everything! I find your story inspiring because you are a fellow kiwi and Taranaki girl! I am 171cm tall and currently 78kg. I have lost 6kgs in the last few weeks, fairly easily but your story has inspired me to go on and lose the next 12 or so! So please keep posting! Oh and I love that your food is stuff that kiwis eat - although I have seen a lot of American sites, the food is not overly inspiring a lot of the time! So thank you!

  9. I can't even tell you how good this sounds right now. It's going on my list to have after I'm done with KISS LC/Primal (no cheese, alcohol, etc).
    Is there room for bacon in that thing? ;)

A bit about me….

I started low carb eating in November 2008 after tipping the scales at a scary 107.1kg. The huge gains came after believing that I ‘needed’ whole grains to produce serotonin. I have suffered with Panic Attacks for the last 7 years and I’m stubborn when it comes to medication, I knew that there was more to my anxiety, because along with the anxiety I had the ‘hypoglycaemia’ symptoms..you know lightheaded if I didn’t eat every 3 hours etc etc.... The whole time I was eating the supposed ‘healthy’ carbs I knew in the back of my mind there had to be a better way. So after many months of research I discovered that true low carb is really the only way to live if I want to have a fufilling life....to have a healthy body and mind. I had done ‘Atkins’ back in 2003 and lost a good amount of weight but I wasn’t really eating well, a lot of diet coke and pork rinds not really what I’d call healthy, I hadn’t interpreted Atkins very well.

This time luckily I stumbled across so many wonderful sites including Mark’s Daily Apple which is my favourite site, it has given me the most informative information. I am doing great in terms of my anxiety, my blood sugar is stable so no more ups and downs which can mimic anxiety. I’m not strictly primal or paleo because I eat a little dairy, being in New Zealand we have wonderful dairy so I don’t cut that but I also don’t have a lot of it, mostly cream, butter and cheese...but it’s good quality. I don’t avoid saturated fats in fact I embrace them, they keep me full and satisfied, and I don’t eat much fruit - mostly berries. I
stick to about 50gms carbs per day to lose weight and 50-100gms carbs per day to maintain. I still can’t believe I get
to eat this way!
