I have decided that I will commit to posting my food journal and weight until I reach my goal! It has kept me motivated being accountable to all of you so I figure that's a good thing :) Enjoy the Food Porn....

Friday 21st January 2011 Weight 71kg
5:45pm 2 almond crackers, 3 macadamia nuts.
7pm Dinner at a friends, wish I had my camera on me as she made us this awesome Salad! Filled with salad greens, chicken, roast pumpkin, roast carrot, green beans, cucumber, cherry tomatoes, avacado and feta with balsamic and avacado oil.  Soo satisfying
10pm 1 pc Lindt 85%

Saturday 22nd January 2011
8:45am 2 poached eggs, 5 small strips streaky bacon with homemade hollandaise.  2 almond crakcers, 1/2 pc 85% Lindt.
9:45am 1 x 30gm Macadamia dark chocolate (70%) bar, Decaf Flat White w 1tsp sugar
3pm Leftover chicken cut up with leftover roast pumpkin, parsnip and carrot with a fried onion and gravy reduction (stock+cream), 2 pcs Sweet and Salty Chocolate (will post recipe), 1/2 pc 85% Lindt.
8:15pm Small glass of husbands strawberry and banana smoothie (made with yoghurt and milk), 1 pc Coconut bread fried in butter topped with almond butter, 1 pc 85% Lindt, Bowl of homemade strawberry sorbet topped with coconut oil/ 85% chocolate.

Sunday 23rd January 2011
8:30am Scrambled eggs made with cream, 4 small strips streaky bacon with homemade hollandaise, 1 pc 85% Lindt.
1pm Decaf Flat White with 1 tsp sugar, 1 x 30gm Macadamia dark chocolate (70%) bar.
6:45pm Roast Pork w crackling, roast pumpkin, carrot and pasnip, fried zucchini and broccoli w gravy reduction, 2 pcs 85% Lindt.


Monday 24th January 2011
6pm Boneless rolled chicken with bacon and garlic butter roasted with gravy reduction, edamame and yellow beans with yum yum mayo, 1 pc 85% Lindt.
7pm 30minute walk

Tuesday 25th January 2011
8am 2 poached eggs, 5 small strips streaky bacon.  2 pieces of Sweet and Salty dark chocolate, 1/2 piece 85% Lindt.
11am Decaf Flat White w 1 tsp sugar
2pm 1 piece of Coconut Bread fried in butter topped with almond butter, 2 almond crackers, 1 1/2 pieces 85% Lindt.
6:45pm Angus Pure Scotch Fillet steak topped with creamy musrooms and a Large Salad - Spinach greens, cucumber, cherry tomatoes, basil feta, fresh corriander, avacado and yum yum mayo, 2 pieces 85% Lindt.


Wednesday 26th January 2011
7am Omelet made with Cream fried in butter filled with mushrooms and parmesan.
Road trip....
3pm BBQ Double cheeseburger with mayo (no bun), 3 pieces 85% Lindt.
7:15pm 1 pork slice, roast pumpkin, silverbeet and beans with hollandaise, fresh golden peach and pineapple fruit salad with whipped cream.




Thursday 27th January 2011
8am 2 poached eggs, 3 grilled pieces of middle bacon, 1/2 grilled tomato and creamy mushrooms
Decaf Flat White w 1tsp Sugar, 1 piece 85% Lindt.
12:30pm 1 Decaf Flat White w 1tsp Sugar.
4pm Roast chicken wing and half a thigh with the skin, 20 pistachio nuts, 1pc 85% Lindt.
7pm Out to Dinner with friends: Entree: Char-grilled Lamb Cutlets on panzanella salad with balsamic dressing and cumin jus, Main: Lemon Crusted Hapuka with Bok Choy, caramellized parsnip, baked cherry tomatoes and white wine sauce, small slice of husband's eye fillet steak.  Desert: Cheese Board shared with 3 of us: a few hard and soft cheeses with 1 strawberry and 3 slices of apple. All the crackers got left :) Decaf Flat White w 1 tsp sugar, 1 pc 85% Lindt.


Friday 28th January 2011 Weigh in 70.4kg...Verdict 600gm loss is great considering how much food I have actually eaten, I am away on holiday this week so I'm using different scales so this loss may not be entirely accurate....will have a better idea next week.

As promised my weekly weigh in....71kg exactly so that's a 1.4kg loss, I'm absolutely stoked with that, I'm aware I won't have losses like that every week, probably more like 1kg or less but the first week is always more.  Soo I've typed out my food journal for you also, you will see how much I love bacon and I love dark chocolate and I can still eat it and lose :)

Friday 14th January 2011 Start weight 72.4
1:15pm Pork rack - 2 med sized loins with crackling, cream + stock reduction, 2 almond crackers, 1 pc of 85% Lindt and 1 30gm Macadamia dark chocolate (70%) bar

7:30pm Out to dinner: 3 egg Omelet filled mushrooms, tomato, onion, bacon and cheese with a small salad on the side.
9pm Decaf Flat White w 1tsp sugar and 1 pc of 85% Lindt

Saturday 15th January 2011
8:20am 2 poached eggs, 5 strips streaky bacon with homemade hollandaise

2pm Homemade Guacamole with 1 large avocado, cherry tomatoes, fresh coriander, lemon juice, salt and hot sauce, thin almond crackers as my "chips" approx 10 of them.  2 pcs 85% Lindt
5pm 2 small Decaf Flat Whites w 1tsp sugar in each
8pm Thai for dinner: 2 stuffed chicken wings, stuffed with pork mince and herbs and deep fried (no breading), Satay Chicken with tons of veggies and cashews, Thai green chicken curry.  2 pcs 85% Lindt

1:30pm 3 Large pieces of grilled middle bacon topped with 3 large slices of mozzarella cheese and herb salt, 1 almond cracker, 1 pc 85% Lindt
7:30pm Large Chicken Salad, chicken coated in Tuscan seasoning and fried in butter, salad - Spinach greens, cherry tomatoes, cucumber, half an avocado, fresh coriander, basil feta with yum yum mayo, 1 pc 85% Lindt

Grain-Free Basic Bread (Coconut Flour Flax Bread)

I cannot take the credit for this recipe as I found it at Joyful Abode which is an awesome blog by the way!! I thought I would give it a try and happy to report it's pretty damn awesome grain free bread, high in fat and low in carbs with super ingredients.

You could eat this everyday if you wanted but if you think it might start a craving for "real bread" then maybe keep it as a treat. The taste has way more flavour than plain bread, great with almond butter which is how I had mine, I had two slices with butter then almond butter when it first came out of the oven and wow it was super filling, it's all I ate for the day that's how filling it is. I reckon it would be awesome for french toast, then the obvious just toasted and used under poached eggs or creamy mushrooms or for croutons, it was really fresh the day after and you could easily use it for a sandwich. Here's the recipe and I've done the nutritional breakdown for it also.

Grain-Free Basic Bread (Coconut Flour Flax Bread) Recipe
• 1 cup coconut flour, sifted
• 1 cup flax seeds, ground and sifted (I discarded the hulls that wouldn’t sift through)
• 1 teaspoon salt
• 2 teaspoons baking soda
• 10 eggs (yeah, here’s the high-protein part)
• 1/2 cup coconut oil, melted
• 1/3 cup plain full-fat yogurt
• 1 Tablespoon apple cider vinegar
Preheat your oven to 325 degrees Fahrenheit (160 degrees celsius).
Mix together flour, flax, salt, and baking soda.
In a separate bowl, whisk together eggs, coconut oil, yogurt, and vinegar.
Pour the dry ingredients into the wet ingredients, mixing after each addition (I did about 3-4 “rounds” of adding dry ingredients).
Pour into a greased loaf pan, and bake 50 minutes. (Probably longer if you are using a smaller loaf pan so your bread is “deeper”) I baked the one above for 70 minutes since it's in a deeper pan which only makes 18pcs not 22.
Cool 10 minutes in the pan, then turn out onto a cutting board. Allow to cool completely before slicing.

If your interested in net carbs it's only 2.12 grams of net carbs per piece

Happy 2011 Everyone, hope your year has started well! I had a wonderful chrismtas and New Years, a bit too much indulging of non primal foods but I'm happy to say that I'm back to my primal ways, after gaining another kilo which puts my at 72.4 exactly today and a photo to show it. I have vowed to get back to 65 kgs by Easter weekend and then by my 30th Birthday which is in May i'm aiming to get to my ultimate goal of 62kgs.

I've started food journaling again which is what I did to get my weight off and I know it works for me, keeps me accountable and focused. I'm hoping to find my camera soon (which I have misplaced after the move) so that I can start taking a few pics of my food for you all to see, it's not all that exciting but may help some of you.

I'm also going to start posting weekly with my weigh in and maybe my food journal if I can be bothered writing it all out!

You may have noticed I have updated all my pictures to show the front, side and back shots at 107kg, 95kg, 84kg, 77kg, 72kg and 65kg, if not you can view them at the bottom of my blog after my story. Enjoy!

I have had a real increase in hits on this blog lately so to all you out there that don't comment thanks so much for reading and I hope my story can inspire any of you wanting to improve your health this year. Pleae feel free to comment and if you have any questions I'm happy to help :)
