Walnut Pesto

This works best with freshly cracked walnuts!


  • 1/3 cup Walnuts 
  • 2 cups Fresh Basil 
  • 2-3 cloves of garlic 
  • 1/3-1/2 cup Olive Oil 
  • 1 Tablespoon Lemon Juice 
  • Freshly cracked Pepper 
  • Salt to taste (1/2-1 teaspoon) 

Place all ingredients in a food processor and blend until combined. Leave in fridge for at least 1 hour so all the flavours marinade together before using.




Pesto Beef Burger Patty

I know a lot of people miss burgers when they go primal, paleo or low carb! Here's a great burger patty that will get you salivating!!!

Serves 4


  • 500gms Beef Mince
  • 1 egg
  • 1/3 cup Pesto
  • 1/4 cup Almond Flour
  • Salt & Pepper


Combine all your ingredients in a bowl, divide into 4 and flatten into patties, fry patties for a few minutes each side and then pop in the oven (160C) for 6-8 minutes, then top with Camembert or any other cheese and grill for a minute to melt the cheese.

These patties stay together really well, are juicy, moist and really tasty!

pecan crusted salmon

This is such a satisfying meal and really gives a great flavour to Salmon. For two salmon fillets:
10 or so pecans
2 tsp fennel seeds
1tsp dill
pinch parsley salt
1 Lemon

Blend together everything bar the lemon. Douse the salmon in lemon, only do this before you cook it otherwise the acid in the lemon juice will start to cook the fish. Top the salmon with the crust and fry in butter. Bake in the oven on 380F for 7-8minutes depending on how you like your salmon. I prefer mine not cooked too much.
